What the fee is for
The transaction fee is what you pay in order not to pay a subscription. Once you are selling enough, the paid plan costs less than the cut, which is the point at which it is worth moving. Stripe's own processing charge is separate and is theirs, not ours.
Refunds
A refund returns the money to whoever paid, reverses the ledger and takes the student's place back. A creator cannot start one from the studio yet, so ask and it will be done for you.
